Ingredients (Makes 8 egg bites)

  • Eggs – 6 large
  • Milk or curd – ¼ cup
  • Onion, finely chopped – 2 tablespoons
  • Capsicum or spinach, finely chopped – 2 tablespoons
  • Boiled corn or grated carrot – 2 tablespoons
  • Black pepper powder – ¼ teaspoon
  • Salt – to taste
  • Oil or ghee – 1 teaspoon (for greasing)

Instructions

  1. Preheat the oven to 180°C and grease a muffin tray or small moulds.
  2. Crack eggs into a bowl and whisk well with milk or curd.
  3. Add chopped vegetables, salt, and pepper; mix evenly.
  4. Pour mixture into greased moulds, filling each about ¾ full.
  5. Place the tray in the oven and bake for 15–18 minutes until set.
  6. Remove and cool slightly before unmoulding.
  7. Store in an airtight container and reheat as needed.
